WHO WE ARE..
CHEF NICK NOLAN
More than 12 years in the culinary profession naturally led Chef Nick to the Central Coast. The lure of Paso Robles with an idyllic landscape sparked his culinary creativity through the surrounding wine region and variety of superior ingredients available on the Central Coast.
Originating from Los Angeles Chef Nick earned his chops in restaurants known for fine dining, elevated American fusion and farm to table style cuisine. Working with passionate and well-honed chefs has instilled a deep understanding and appreciation for quality ingredients and instilled the importance of technique.
Traveling the world has also heavily influenced his style and the flavors he uses. While classically trained in French technique, Nick has had the opportunity to work and experience unique cuisine from many different countries, cultures and societies.
